Cool Down & Power Up Smoothies

Posted in All Recipes on October 28th, 2009 by redkathy – Comments Off

Satisfying smoothies can do more than just cool you down on a hot summer day. They can power you up, too.

Whether for breakfast, an afternoon snack, or as a lunchtime refresher, smoothies are a refreshing way to get powerful nutrition. And as a busy mom looking for convenient and tasty ways to boost my family’s nutrition, I’m cheering about how easy it is to do it.

* Fruit juices-orange, cranberry, other favorites–provide antioxidants and essential vitamins we need daily.
* Milk-especially fat-free evaporated milk-delivers essential calcium and protein.
* Add-ins provide an extra punch of super-nutrition:
o Just a half cup of pumpkin, from the can, delivers great fiber and more than a day’s worth of the antioxidant Vitamin A;
o fresh fruit like banana, berries, peach, nectarine or mango add fiber and antioxidants;
o a spoonful of peanut butter adds protein and kid-approved flavor.

If you’ve got teens or other family members who like to make their own smoothies, take advantage of  my tips to make “just in time” smoothie blending a snap:

* Keep cans of fat-free evaporated milk in the fridge for “right now” chilled smoothies.
* Bananas, peaches or other fruit almost too-ripe-to-eat? Toss in the freezer for a future smoothie.
* Fill the freezer with light, low-fat and/or reduced-sugar ice cream-in vanilla and other favorite flavors.

Spring Brunch in a Snap

Posted in All Recipes on October 29th, 2008 by redkathy – Comments Off

Spring is the perfect time for a lively brunch with friends and family. Light dishes packed with bright flavors can be paired with refreshing cocktails to make a delicious menu. With a few key ingredients, putting together a brunch can be easy.
Start off with marinated olives – savory little bites of wow that few guests will be able to resist. Lindsay Olives offers a broad variety of olives, so you can experiment with different flavors.
As a main dish, serve up an elegant frittata. A frittata is a firm Italian omelet that can be served warm or at room temperature. Mixing herbs into the eggs makes every bite taste like spring. If finding and storing fresh herbs is a challenge, try Gourmet Garden squeezable herbs and spices, which are ready to use for up to three months and can be found in the fresh produce section of most grocery stores.
Simple drinks that complement the food flavors are a must. Ready-to-serve margaritas like Jose Cuervo Golden Margarita are a convenient way to entertain with style. They can also serve as a great base for creating delicious new cocktails simply by adding fresh ingredients.
These easy recipes can be made ahead of time, so all you have to do on brunch day is sit back with friends and enjoy.

Weenie Roast Wines

Posted in Cooking Tips & Ideas on July 31st, 2008 by redkathy – Comments Off

hotdogsWhat are the best wines for a weenie roast?

Does the acidity in a Sauvignon Blanc complement or fight with the acidity of ketchup? And if you’re drinking Riesling, should you serve sweet or dill pickle relish?

Seriously—will anyone at a weenie roast really notice if a Malbec is too ponderous for a hot dog? Probably not.

Still, doesn’t finding a yummy match sound like a good excuse for a party? You supply the hot dogs, buns, condiments, and a bottle of wine or two, then ask each friend to bring a side dish along with a bottle of wine he/she thinks will be a good match.
